One of those dishes Ted & I love to cook (and eat!) is Tequila Shrimp. It is super tasty and takes only 11 min and 11 seconds to cook 🤪. And you can cook it “Edith style”, meaning: there are no measurements involved, just whatever you have on hand!
Ingredients

- Tequila
- Shrimp
- Avocados (very ripe)
- Garlic
- Lime juice
- Cilantro
- Olive oil (our favorite: Giancola family virgin olive oil from Templeton, CA)
Preparation
Try the Tequila. Is it good, use it. Are you not sure? Try it again. Repeat if necessary! Once you’ve established a relaxed cooking attire, start the adventure: Heat some oil in a pan, add chopped garlic and then the shrimp. Cook a few minutes until the shrimp are done, then add lime juice, cilantro and the chunks of avocado. Cook 1-2 or 3 more minutes and then add the magic ingredient: Tequila (less if you have to feed little people, more if you want them to sleep good). 1 or 2 minutes later, when the avocados gets creamy and the sauce looks perfect, it’s ready to serve!
